I have been considering this myself. As far as I have found so far, those boxes are the only route to go. I have heard of other types of water proof boxes and have a few leads that I am chasing down. I will let you know what I find out.

Not a hardware expert, and only LBing since spring, but I do know
that the Mason jar folks and the peanut butter people (mayonnaise,
too) have used the same size lids for years. In theory, the gasket of
the canning lid should work to water proof a plastic peanut butter
jar (pint/pound size). Rusty rings and lids might then be an issue;
paint them or use the fancy ones meant for jelly?

You DO NOT want to use peanut butter jars, Or Plastic jars on the outside as if you put them in a pond, Snappers will chew them up. The Smell of the oil from the Peanut butter will stay in the plastic no matter how hard to try and wash it. I am testing a Cricket cage (Wal-Mart $2.39) and see if that will stop the Snappers.
The Lids on a mason jar will last a long time underwater without rusting that much.

Freezing depends on how deep underwate they are. If its not very
far out in the pond or if the whole pond freezes solid then worry. If
its deep and only the top of the pond freezes it should be fine.
I hope the stringer you have it on is a really sturdy one. :)

Good point! I just don't think like a critter, and have too much
faith in detergent, and fear of broken glass, I guess. LOL, wondering

Try a putting a PVC pipe box together. Cut to desired length and use
an end cap and a sewer cleanout screw in cap. It should be very water
proof.

I had placed boxes on the water, accessible by paddlecraft only and they
were some very lonely letterboxes. No one visted them for over a year
so I yanked them. Back east, folks have placed letterboxes you must get
to by boat and down in Southern Oregon and California such boxes exist,
but completely submerged??? Hmmmm... Sounds interesting. Plan on using
a Write in Rain notepad? Even so, it doesn't take ink too well and it
smudges the pad. Still, I can't help but love that sense of adventure
you have. When it comes to letterboxing, where there's a will....(as
long as the National Park Service isn't involved) there's a way.
And don't get me wrong, folks. Even with the NPS's misguided policy on
Letterboxing I will still go to a National Park anytime I get the
chance. I think they cut their nose to spite their face by prohibiting
our overall nonintrusive sport, since it will bring them business and
happy people. But what can you do???

I'll see about scuba gear and getting PADI certified for any letterboxes

The Cleanout hole on PVC pipe is not water tight. Geocachers have tried this and found that stuff gets wet inside (And they are Above Ground)

Try your local dive shop (as in scuba). Most good shops have cheap
methods for keeping things dry. One thing to worry about is bouyancy
of the letterbox. The more air in it, the more likely it is to
float.
You might want to look into a cheap drybag or triple sealing in
heavyduty freezer ziplocs and then hiding it in a wet box so it
sinks. Good luck.
